Carob is exploited predominantly for the industrial transformation of the seeds, to obtain endosperm flour (seed gum) and germ flour (as a by-product), used as a thickening agent and a source of protein, respectively, in food preparations. However, carob seeds are important not only from a technological and a nutritional point of view, but also in terms of their medicinal or pharmacological value. Carob gum has been found to treat infantile diarrhea and to control hyperlipidemia (high cholesterol). Carob germ, with its good amino acids profile and its high content of polyinsaturated n-6 fatty acid, has been found to be suitable both as a major dietary item and for medical use, once cooked to destroy natural toxicants.
